Note for installing X-ring chains: As X-ring chains are wider than standard roller chains, when fitting an X-ring chain to a motorcycle that was fitted with a non O-ring chain as original equipment, it is essential to check that there is proper clearance of the engine cases near the countershaft sprocket and any other places of close contact. Failure to do so could result in damage to the chain and motorcycle and could ultimately cause the chain to fail.

2005 CRF250R - This is the setup to use!
Renthal chain is a little heavier than the DID non o-ring (Honda manual), but it does not streatch like the DID. I also found the Renthal chain matches these sprockets better than any other. I race hare scrambles and get all kinds of debris mixed between the spockets and chain, but this setup has worked out to be the best I've tried. Somewhat self clearing and is durable. Clean it after your ride, hit it with a water dispersant (WD-40), when the bike is finished drip drying, lube the chain with your favorite non sling. For me it is definitely worth the money.

Minimal Maintenance
I have installed the twin ring sprocket on two different bikes with a DID chain and been very pleased. The light weight steel gear ring on an aluminum sprocket performs well and will out last several sprockets with aluminum teeth. Currently have about 70 hrs on it and expect to get at least another 25 hours. Have not installed this new set yet with the Renthal chain but anticipate it will do well also.

Are you able to use the stock hardware (bolts) to fasten the new sprocket to the hub?

Yes you can use the stock hardware to attach the sprocket to your hub. It is recommended to replace the hardware when changing sprockets though due to high stress they endure. There are after market sprocket bolt kits that are reasonably priced for a new set of hardware.

The X-ring chains really are the top of the line style chain. There are also Z-ring chains but is debatable as to which is better. O-ring chains with a single wide point of contact will tend to last a little longer but have much higher friction than the X-ring or Z-ring chains. One of the best X-ring chains out there is the DID ERV3. Incredibly high quality chain that you cant go wrong with.

Yes, once you have specified your bike, you then have to specify the front and rear sprocket teeth quantity just before you add to cart.

I think you are asking about the actual steel teeth on the rear sprocket. If so, I don't think it is sold separately. You can purchase the rear sprocket assembly separately without having to buy it in a kit that would include the chain and front sprocket. Hope this helps.
